Barley with Apples and Arugula

Ingredients
- 2 cups quick cooking barley
- 1 cup chopped walnuts
- ¼ cup olive oil
- 2 Tbsp lemon juice
- 2 tsp organic Dijon mustard
- 2 tsp agave nectar
- ¼ tsp salt
- 1 (5-oz) pkg baby arugula
- 3 red apples, chopped
- ¼ cup thinly sliced red onion
- 1 cup crumbled feta cheese
Directions
- Cook barley according to package directions. Toast nuts in a dry skillet over medium-high heat 2 to 3 minutes or until golden and fragrant, stirring often.
- Whisk together oil, lemon juice, mustard, agave, and salt in a large bowl. Add barley; toss. Divide among 6 plates. Top with arugula, apples, onion, cheese, and nuts.
