Barley with Apples and Arugula

  • 2 cups quick cooking barley
  • 1 cup chopped walnuts
  • ¼ cup olive oil
  • 2 Tbsp lemon juice
  • 2 tsp organic Dijon mustard
  • 2 tsp agave nectar
  • ¼ tsp salt
  • 1 (5-oz) pkg baby arugula
  • 3 red apples, chopped
  • ¼ cup thinly sliced red onion
  • 1 cup crumbled feta cheese


  1. Cook barley according to package directions. Toast nuts in a dry skillet over medium-high heat 2 to 3 minutes or until golden and fragrant, stirring often.
  2. Whisk together oil, lemon juice, mustard, agave, and salt in a large bowl. Add barley; toss. Divide among 6 plates. Top with arugula, apples, onion, cheese, and nuts.
