Salsa, Cheddar, Turkey and Veggie Roll Ups
These roll ups are packed with all the things to help fuel your body and make sure you skip that midday slump.
Ingredients
- 2 Tbsp reduced fat olive oil mayonnaise
- 2 Tbsp refrigerated salsa
- ⅛ tsp chili powder
- 1 green onion, chopped
- ¾ lb thinly sliced low sodium roasted turkey breast
- 1 red bell pepper, sliced
- ¼ cup shredded reduced fat sharp Cheddar cheese
- 1 cup chopped romaine lettuce
DIRECTIONS
- Combine mayonnaise, salsa, chili powder, and green onion.
- Divide turkey slices into 8 stacks on a work surface. Top each stack with mayonnaise mixture, bell pepper, cheese, and lettuce.
- Roll up; secure with toothpicks.
