Spinach Pesto Breakfast Quesadillas
These quesadillas are jam packed with nutrition and fresh, tasty ingredients to get your day going with a smile on your face.
Ingredients
- 4 large eggs
- ½ tsp salt
- ½ tsp pepper
- ¼ cup creamy pesto
- 4 low carb soft taco size flour tortillas
- 2 cups spinach, divided
- ¼ cup crumbled feta cheese, divided
DIRECTIONS
- Whisk together eggs, salt, and pepper in a bowl.
- Cook eggs in a nonstick skillet over medium heat, without stirring, until bottom begins to set. Cook, stirring constantly until thickened and set.
- Spread 1 Tbsp pesto on each tortilla. Place scrambled eggs, ½ cup spinach, 1 Tbsp cheese, and, if desired, hot sauce on one half of each tortilla. Fold tortillas in half.
- Wipe skillet clean. Cook quesadillas, in batches, in skillet coated in cooking spray over medium-high heat 3 minutes per side or until lightly browned and cheese is melted.
