Spinach Pesto Breakfast Quesadillas

These quesadillas are jam packed with nutrition and fresh, tasty ingredients to get your day going with a smile on your face.



  • 4 large eggs
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ cup creamy pesto
  • 4 low carb soft taco size flour tortillas
  • 2 cups spinach, divided
  • ¼ cup crumbled feta cheese, divided


  1. Whisk together eggs, salt, and pepper in a bowl.
  2. Cook eggs in a nonstick skillet over medium heat, without stirring, until bottom begins to set. Cook, stirring constantly until thickened and set.
  3. Spread 1 Tbsp pesto on each tortilla. Place scrambled eggs, ½ cup spinach, 1 Tbsp cheese, and, if desired, hot sauce on one half of each tortilla. Fold tortillas in half.
  4. Wipe skillet clean. Cook quesadillas, in batches, in skillet coated in cooking spray over medium-high heat 3 minutes per side or until lightly browned and cheese is melted.
