Corn and Shrimp Skewers with Fresh Cravings Poblano Street Corn Dip

  • 1 lb large shrimp, peeled and deveined
  • 1 tub Fresh Cravings Poblano Street Corn Dip & Spread
  • 4 ears of fresh corn, husked and cleaned
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp cilantro
  • ½ cup cotija cheese
  • Salt and black pepper to taste
  • Wooden skewers, soaked in water for 30 minutes

Prepare the Marinade:

  1. In a bowl, mix together olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper. This will be the marinade for both the shrimp and corn.
  2. Place the peeled and deveined shrimp in a bowl and coat them with half of the prepared marinade. Allow them to marinate for at least 15-20 minutes.
  3. Cut each ear of corn into 2-3 inch pieces. Brush the corn pieces with the remaining marinade, ensuring they are evenly coated.
  4. Thread the marinated shrimp and corn alternately onto the soaked wooden skewers, creating a combination of shrimp and corn on each skewer
  5. Preheat your grill to medium-high heat.
  6. Place the skewers on the preheated grill and cook for about 3-4 minutes per side, or until the shrimp are cooked through and the corn is lightly charred.
  7. While the skewers are still hot, brush them with a little extra marinade. Top them with cotija cheese and cilantro and serve them alongside Fresh Cravings Poblano Street Corn Dip for dipping.
