Huevos Rancheros

Fresh Cravings Salsa is the perfect fresh topping for this healthy breakfast!

  • 4 corn tortillas
  • 2 tsp olive oil
  • 4 large eggs
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 cup canned refried black beans
  • ¼ cup Fresh Cravings Salsa
  • 1 small avocado, sliced


  1. Preheat oven to 425°F. Place tortillas on a baking sheet; coat both sides with cooking spray.
  2. Bake 5 minutes per side or until crisp.
  3. Heat oil in a large nonstick skillet over medium heat. Crack eggs into skillet.
  4. Cover and cook 3 minutes or until whites are set and yolks are cooked to desired doneness; sprinkle with salt and pepper.
  5. Meanwhile, heat beans according to package directions. Spread on tortillas.
  6. Top with eggs, salsa, and avocado.
