Mediterranean Tortilla “Pizzas”

- 4 soft taco-size whole wheat tortillas
- 1 Tbsp olive oil
- ½ cup Fresh Cravings Classic Hummus
- ½ (3-oz) pkg thinly sliced sun-dried tomatoes
- ¾ cup crumbled reduced-fat feta cheese
- ¼ cup sliced pitted kalamata olives
- ½ cup thinly sliced red onion
- Chopped fresh parlsey (optional)
- Preheat oven to 450°F. Place tortillas on a baking sheet. Brush with oil; bake 5 minutes.
- Top each tortilla with hummus, tomatoes, and cheese; bake 5 minutes or until cheese is melted and tortillas are crisp. Sprinkle with olives, onion, and, if desired, parsley.
