Mexican Cauliflower Rice
Mexican cauliflower rice with Fresh Cravings Salsa is the perfect base for lots of dishes. Just add your choice of protein and your easy healthy lunch or dinner is done! our favorite toppings.
- 1 tbsp. vegetable oil
- 1 head cauliflower – grated
- 1 cup Fresh Cravings Restaurant Style Salsa – hot
- 1 lime wedge
- 1 Tablespoon chopped cilantro
- Heat skillet over medium high heat, add 1 tbsp vegetable oil add grated cauliflower and salsa. Cook for 10 minutes.
- Squeeze lime and toss, sprinkle with cilantro.
- Serve with seared chicken or as a side dish.
