Salsa Scrambled Eggs
A little cheese and fresh salsa turns boring eggs into a mouthwatering meal. Serve in warm tortillas for delicious breakfast tacos.
- 2 large eggs
- 1 tbsp shredded cheese
- 1 tbsp Fresh Cravings Salsa
- 2 corn tortillas warmed
- 1 tsp fresh cilantro
- Beat eggs in a bowl. Coat a small non-stick skillet with cooking spray and heat over medium heat. Add the eggs and cook, stirring, until almost firm; stir in cheese and salsa. Spoon onto tortillas and top with cilantro.
- To warm tortillas, wrap in barely damp paper towels and microwave on high for 30 to 45 seconds.
- Spoon salsa eggs into tortillas and serve.
