Spicy Pepper and Onion Scrambled Eggs

These veggies eggs go perfectly with Fresh Cravings salsa!

  • ½ cup finely chopped onion
  • 1 Tbsp olive oil
  • ½ red bell pepper, diced
  • 1 tsp ground cumin
  • ½ tsp cayenne pepper
  • ¾ tsp ground black pepper
  • ¼ tsp salt
  • 8 large eggs, lightly beaten
  • ¼ cup Fresh Cravings Salsa
  • 1 avocado, sliced


  1. Cook onion in hot oil in a large nonstick skillet over medium heat 4 minutes or until lightly browned. Add bell pepper, cumin, cayenne, black pepper, and salt. Cook 1 minute, stirring constantly.
  2. Add eggs; cook 2 minutes, stirring constantly. Cook until eggs are thickened and set. Serve eggs with salsa and avocado.
